Sweet & Salty... Chocolate & Peanut Butter Chip Pretzel Cookies

...One of my favorite combinations. These cookies are delicious. I made them last night and am so excited to deliver them today to my friend Michelle who just had her 2nd little boy. I am sure she could use some Chocolate and Peanut Butter Chip Pretzel Cookies. I found this recipe on Pinterest. Chocolate & Peanut Butter Chip Pretzel Cookies
Makes 24 cookies

Ingredients:
  • 1 1/2 cups of all purpose flour
  • 1/2 tsp. of salt
  • 1/4 tsp. of baking soda
  • 1/2 cup of butter at room temperature
  • 1/2 cup of tightly packed light brown sugar
  • 1/3 cup of granulated sugar
  • 1 egg (beaten)
  • 1 tsp vanilla extract
  • 1 cup milk chocolate chips
  • 1/2 cup peanut butter chips
  • 1/2 cup broken up pretzel pieces
  • Pretzel Salt or Sea Salt
Directions:
 
Step 1. Sift together the flour, baking soda, and salt. Set aside.



Step 2. In a mixer or large bowl, beat butter and sugars together on medium speed until light and fluffy (appox. 2-3 minutes). On low speed, slowly add the beaten egg and vanilla extract.


 


Step 3. Add the flour mixture and mix until flour is completely combined. Stir in the chocolate chips, peanut butter chips, and pretzels. Cover and refrigerate for an hour.

Step 4. Preheat the oven to 350F. Line baking sheets with parchment paper. Scoop out and roll dough in the palm of your hand.  Sprinkle with sea salt or pretzel salt. Leave about 2 inches between each ball. Bake for 10 minutes. For crispier cookies increase the baking time by 1-2 minutes. Allow the cookies to cool on the baking sheet for a few minutes before removing.

Smells delicious. Can't wait for it to cool so I can taste test!
 
As I mentioned at the beginning of this post, I made these for my dear friend and new mommy, (for the 2nd time) Michelle. I wanted a unique way to package them and deliver. I found a really pretty wine tube, lined it with wax paper and stacked the cookies inside. Can't wait to share these with her.
