Crock Pot Cinnamon Almonds

One word...DELICIOUS! I just had to share this with you all. This recipe is so simple and so delicious. First, I must give credit where credit is due. I found this recipe on Pinterest and it's from a blog called "detrimental beauty".


Ok, now it's time to get down to business and share this amazing recipe with you.

Ingredients-
1 1/2 C. Sugar
1 1/2 C. Brown Sugar
3 Tbsp. Cinnamon
1/8 tsp. Salt
1 Egg White
2 tsp. Vanilla
3 C. Almonds
1/4 C. Water

Now check out just how simple this is...

In a medium sized bowl mix sugars, cinnamon and salt. Set aside. In another medium size bowl, whisk egg white and vanilla until it's frothy. Add almonds. Make sure almonds are well coated in egg white mix. Add sugar mixture to the almonds and toss until coated.

Be sure to spray your crock pot well with Pam. Add almond mixture to crock pot and cook on low.

Cook with lid on for 3-4 hours. My crock pot is large and runs very hot, so 3 hours was enough time. Be sure to stir the mixture every 20 minutes (if not the sugars will start to caramelize into big clumps). During the last hour of cooking, add 1/4 cup of water and stir well. Be sure to allow nuts to cook at least another 45-60 minutes after you add water.

Continuing to stir is very important later in the cooking process, if not you'll have the caramelizing problem I mentioned above.

Allow to cool on parchment paper before storing. Best to store in air tight container for long lasting freshness.
