Copycat Mint Milano Cookies...Um, Yes Please!


Christmas is almost here, so close I can almost taste it with these copycat Mint Milano Cookies. I made these earlier in the week and honestly can't believe there are still some in the house. If you are a fan of Pepperidge Farm's Mint Milano cookies, you must try these. Above is a picture of my "adapted" cookie. I say adapted, because I didn't exactly follow the recipe. For whatever reason, I had a really hard time working with the shortbread cookie dough. I could not get it firm enough to roll into a log and slice. So instead I scooped them onto my cookie sheet and baked as you would a regular cookie. Once cookies were done baking (and not completely cooled), I cut them in half, hence the shape you see above. Despite not looking like a traditional Pepperidge Farm Mint Milano Cookie, they sure do taste like them! Below is a link to All Free Copycat Recipes Website.

I have recently become a big fan of pesto. Yum-O. I am going to be completely honest and tell you that this recipe was inspired by the "Chicken Pesto Toasted Flatbreads" at Tropical Smoothie. Woodford Reserve Bourbon Balls ~ A sweet Father's Day Treat

Our daddy loves bourbon. Since I met the Mister, bourbon has been a drink of choice. A couple of years ago, he and some friends headed to Kentucky for a bachelor party bourbon trail tour. He had a great time for obvious reasons, but came home with a new love, appreciation and fascination with bourbon. Our liquor cabinet went from having a selection of 2-3 bourbons to probably 6 or 7 choices at any given time. Quick and Easy Chicken Enchiladas (21 Day Fix Inspired Recipe)

Here's another quick, easy and healthier meal option to try. This was my first time preparing and I have to say, it was pretty easy. I will definitely make again, but would make a homemade enchilada sauce instead of store bought. Time and preparation were not on my side when I was shopping for this meal. Like a lot of my recipes, I like to cheat to make things easier. In this case, it was buying a rotisserie chicken and store bought enchilada sauce from Fresh Market.
