3 Boys Deep and an Awesome Dinner...All In A Days Work

I must say I am quite impressed with myself. I survived day 1 of watching my 3 month old nephew Liam. I am a mom of 2 boys, so of course I am somewhat seasoned. However, I have never had 3 little boys, all under the age of 4 by myself. Liam is a great baby, which makes things so much easier. I will admit that as excited as I was to start babysitting him 2 days a week, I was also nervous. Both Patrick and Owen go to school from 9am-12pm on Tuesday and Thursday, so at least I am down 2 in the morning. My biggest fear was the drop off and pickup of the boys. Loading everyone up, unloading everyone, dragging all of the lunch boxes and bags, etc. Surprisingly and more likely, by the grace of God; pick up and drop off went really smooth. I know it's only day 1and I am getting way ahead of myself with my next comment, but... having 3 isn't that bad. Yep, I said it. I know what you're thinking. "This chick is crazy!" Which the Mister would completely agree with you. We've actually been joking that this experience will do one of two things: 1) make me want a 3rd or 2) send us both running for the doctors to get my tubes tied and the Mister a vasectomy. My husband is hoping for #2. Which brings this question to my mind; when does one know they're done and their family is complete? The rational Melissa is done having children. We have 2 healthy, fun and loving little boys. We have started saving for their college educations. Our home has ample space for them to grow up in. We're financially comfortable. You see where I am going? The rational me says, "Why rock the boat?" The emotional, maternal, I love being pregnant me says, "Maybe 3 is our magic number." Like I said, "Getting a head of myself." Good thing the Mister probably won't see this post. He might have me evaluated and committed.

So back to me being impressed with myself. The kicker of today, I managed to be productive. While the little boys slept and O played nicely and quietly (such a good boy), I was able to get some MOMs Club and Jamberry work done. But wait, there's more! I even pulled off an awesome dinner.



Pepper Steak with Quinoa and Brown Rice. Adapted from GroeryBudget101.com's recipe.






Ingredients:
1 lb. of flank steak, sliced into thin strips
2 TBS olive oil
Sliced peppers (I used red, yellow, orange and green)
Onion sliced (I did not have on hand, so I didn't use)
3 garlic cloves, minced
3 TBS cornstarch
1 can (14.5 oz) can of low sodium beef broth (I didn't have on hand, so I used deef bouillon cubes and water)
2 TBS lite soy sauce
hot rice (I used quinoa and brown rice with garlic made by Seeds of Change (my new favorite)
pepper to taste (I didn't add any pepper)

Directions:
Begin by heating oil in large skillet over medium heat.
Cook steak strip until slightly pink.
While steak is cooking, in a separate bowl, mix beef broth, cornstarch and soy sauce. Mix well and set aside.
Add peppers and onions to your steak and cook for another 2-3 minutes or until peppers and onions are to you liking. Be careful not to overcook your steak. If you like your peppers and onion soft, I recommend adding them to the oil when you add your steak and cooking them together.
Next, add minced garlic and broth mix. Bring to a boil and let cook for about 2 minutes while string to let sauce thicken.

Serve over rice or with baked potato. We had with the quinoa and brown rice and corn on the cob.

Pretty simple recipe. Fairly healthy. I would have added broccoli if I had that on hand. The best part is all the flavor this recipe packs. So delicious. Not too bad for my first day on the job with 3 little boys.
