Homemade Cookie Monster Ice Cream
Made with love... and lots of yummy ingredients! I was looking for an activity to do with O in the afternoon while P was napping. While perusing Pinterest, I stumbled upon Capturing Joy with Kristen Duke and her recipe for Cookie Monster Ice cream. The hook, line and sinker was NO machine!
We love ice cream, all of us, even P (he eats everything). We love it so much, that I know better than to keep it in the house. Instead we find any reason to make a trip to our favorite ice cream place, Kilwins. Reasons might be- It's Sunday, it's hot outside or let's go to Barnes and Noble...hey, what do you know Kilwins is next door! Always a reason.

Ingredients-
ice cream:
- 2 cups heavy whipping cream
- 1- 8oz package of lite cream cheese
- 1- 14 ox can of fat free sweetened condensed milk
mix ins:
- 10 Back to Nature cream filled cookies
- 10 Chips Ahoy Chocolate Chip Cookies
- Blue food coloring
Directions-
- Chill 2 metal bowls and beater blades for at least 30 minutes
- Beat the heavy whipping cream until a stiff peak forms (basically thickens, about 3-4 minutes)
- In the other metal bowl, beat the cream cheese until it's creamy and smooth (about 3-4 minutes)
- Slowly add sweet and condensed milk to cream cheese and beat again
- Add in blue food coloring until desired color is reached. (I added more blue after adding whipped cream. The whipped cream diluted the blue quite a bit.)
- Gently fold in whipped cream
- Stir in cookie chunks
- Transfer into a freezer friendly dish (I used a metal bread pan), covering with saran wrap and then foil
- Freeze 4-6 hours or overnight
***Disclaimer- In my opinion, it tastes more like frozen custard than ice cream.
We made this in the afternoon to share with our cousins after dinner. It's a cousin sleepover! Sugar is the last thing they'll need. I am sure I'll regret this at some point. Last night before bed I snuck a bite and it was really good. Can't wait to dig in!
