Lasagna ~ A Healthier Spin On a Delicious Italian Meal

Lasagna, need I say more. This delicious Italian meal is full of cheese and O-M-G, my mouth is watering just thinking about it. So those who know me, know I eat pretty healthy. You must be thinking I've fallen off my rocker. Nope, I am about to put a healthier spin on this bad boy for us all to enjoy without the guilt. Ingredients: 9 cooked whole wheat lasagna noodles 1 1/2 cups fresh baby spinach 2 cups low fat ricotta cheese 1/2 cup parmesan cheese 1 egg 1/2 tsp minced garlic 1/2 tsp Italian seasoning Salt & pepper to taste 1/2 pound cooked ground turkey Spaghetti sauce 1 cup shredded mozzarella cheese Directions: 1. Cook noodles according to directions on the package. 2. Pre heat oven to 350°. Cook ground turkey stove top in a medium skillet. Adding salt and pepper to taste. Set aside. 3. Meal Planning- It's not just a strategy, It'a way of life!

The honest truth is that when I am prepared I am successful. Now that doesn't mean that I don't give into the temptation of cookies or other treats that might be in the house. But I can say that overall, my eating is what it should be when I meal plan for the week. Meal planning can be overwhelming. The good news is that that there is no right or wrong way to meal plan. It's a matter of finding what process works for you, your lifestyle and family. About 8 months ago, I decided it was time to take control of our eating and really focus on healthier choices. I love a good Philly Cheese Steak (or Chicken Philly). The cheese, juicy steak, grilled onions, O-M-G! My mouth is watering just thinking about this glorious meal. We've been lucky enough to finally get some cooler temps in the last week or so and it's been a real treat. For some reason when the temperatures drop, I start to crave comfort food. Most of these foods tend to be not as healthy of choices, like the named sandwich above. So I set out to find and try some healthier versions of my not so healthy comfort foods. Here is a great spin on a traditional Philly Cheese Steak. I basically replaced the bread with a bell pepper. Saved lots of calories on the hoagie roll and got in an extra veggie with the bell pepper. It's a win-win.
