I'm Back...

It has been way too long, a month exact, since my last post. I may have not been posting, but that doesn't mean I have not been busy. Very busy actually and between O, life, friends, crafting and did I mention, major computer issues; well you get where I am going.

Well now it's time to play catch up and post everything we've been up to.

Chicken Pesto Flatbread

I have recently become a big fan of pesto. Yum-O. I am going to be completely honest and tell you that this recipe was inspired by the "Chicken Pesto Toasted Flatbreads" at Tropical Smoothie. I ate there for the first time last Friday and was blown away by the deliciousness of this flat bread. I knew that I would have to replicate it very soon...and I did just that tonight. What you'll need: -Chicken: I used cutlets since they were thinner and smaller. I actually oven baked my cutlets in foil pockets at 400 degrees for 15 minutes. -Flat bread: I found 5 Grain Foldit Artisan Flat bread in the deli section at Publix. It was delicious and the best part, only 90 calories! -Pesto: I was originally going to make my pesto, but then stumbled upon Monterey's Basil with Almonds and Pine Nuts Pesto. Trader Joe's Cauliflower Pizza Crust

It's SO GOOD! Let's just start by saying that. A while back I made my own cauliflower crust and honestly, it's a ton of work. You can check that post out here . So when a friend told me that Trader Joe's had a cauliflower pizza crust, I made it my mission to get there and scoop some up.  Unfortunately, I found an empty freezer case, but I wasn't leaving without asking to see if there was some in the back. Sure enough, I scored the last 2 boxes in the store. The woman informed me that this item would be out of stock until sometime in July. Apparently, they are tweaking the baking instructions and need to reprint all of the boxes, etc.  With that being said, I agree that the directions do need to be tweaked. I am pretty sure that the cook time of 8-10 minutes is a misprint. I ended up baking mine for about 22-24 minutes and that still left parts of the center cooked, but not crispy. Woodford Reserve Bourbon Balls ~ A sweet Father's Day Treat

Our daddy loves bourbon. Since I met the Mister, bourbon has been a drink of choice. A couple of years ago, he and some friends headed to Kentucky for a bachelor party bourbon trail tour. He had a great time for obvious reasons, but came home with a new love, appreciation and fascination with bourbon. Our liquor cabinet went from having a selection of 2-3 bourbons to probably 6 or 7 choices at any given time. Blanton's, Woodford Reserve, Buffalo Trace & 1792 are just a few favorites you'll find in our cabinet. With Father's Day being just around the corner, I took to Pinterest for some gift ideas.
